Our matcha, organically grown in Kagoshima Prefecture, offers a unique take on this complexity.
It begins with a subtle aroma and a gentle burst of "umami" and sweetness. This is quickly followed by a clean wave of bitterness that ultimately melts into a "lingering, sweet aftertaste" that persists beautifully on the palate.
Traditional matcha production often relies on heavy use of chemical fertilizers to achieve that intense, dark *umami* flavor. We, however, are dedicated to delivering the authentic, inherent taste of the tea leaf itself. To ensure purity, our matcha is 100% organically grown, using no pesticides and no chemical fertilizers.
- How Matcha Is Made: A Labor of Love -
While matcha and other green teas are made from the same Camellia sinensis plant, their key differences lie in cultivation and processing.
1. Shading for Umami
The tea plants destined for matcha undergo a crucial step: they are covered with a net to block sunlight for 20 to 30 days before harvest. This process prevents the tea leaves' natural "umami" compounds from converting into bitter catechins, resulting in both a deeper green color and a richer flavor.
2. Tencha (The Flake)
Unlike leaves for standard green tea, which are repeatedly rolled to achieve their characteristic needle shape, matcha leaves are not rolled. Instead, they are simply dried, and the stems and veins are removed. This unrolled, dried leaf material, finished in a flake-like form, is called "Tencha".
3. Stone Milling
Finally, the Tencha flakes are slowly ground using a traditional stone mill into the ultra-fine powder known as "Matcha". Matcha slowly ground this way has a fine texture, an excellent mouthfeel, and an exceptional aroma.
- Storage Tip -
Matcha is sensitive to air and moisture. After opening, use your matcha as soon as possible. If you need to store it, place it in the freezer. Before using, allow the sealed package to return to room temperature for about an hour before opening.
